My Favorite season is coming along nicely! it’s winter soon and i am super-duper-tuper amped! i absolutely love winter, it is my favorite season of all time! that’s right ALL TIME! no one gets it :|… But i don’t care, it’s a season for warm knit-wear, snuggling, hot chocolate, soup and all kinds of yummy-in-your-tummy food!!
This is my Kick off to a great Winter!
Vegetable Soup 😛
1 cube vegetable stock(I used a Vegan one from Fresh Earth)
2 Carrots Chopped-you can peel them, but I prefer not to.
1 tomato chopped
1/2 onion chopped coarsely
2 tsp tomato paste
5 sugar snap peas
1/2 red bell pepper chopped into strips
1/4 cup beans(Kidney beans, Butter beans, Chick peas)- I used Kidney Beans
1 tsp salt
2 tsp pepper
1 tsp paprika
1 tsp cayenne chilli powder
1/2 tsp nutmeg
1 1/2 cups water
Perform prep- Chopping, peeling etc.
In a dry pan lightly brown the onions and Red bell pepper strips- *until onions become translucent.
In a small pot bring the water to a boil
In a Small pot add in the Stock cube, Tomato paste, spices and the rest of your veggies-*omit the onions and Red bell peppers for now
Cook them all together for around 25-45 mins-*until carrots become soft
Once the carrots are soft place the soup into a blender and blend until smooth
Before serving, add the onions and bell pepper strips to the soup, mix and tuck in! 😀 yummies!
