Dinner- Soy-Balsamic Baked Tofu and a Colorful fruity salad.

Ingredients:

1 Thick slice of firm Tofu(Drained and Pressed for 30 mins)

1 slice of Rye bread(or bread of your choice)

1 apple

1 celery

5 grapes

handful of dried cranberries

red bell pepper

Marinade:

1/4 Cup Soy Sauce

1/5 Cup Balsamic vinegar

1 tsp ground ginger

2 tsp Grounded pepper

1 tsp Salt

2 tbsp Masala

1 tsp paprika

1/2 onion

Method:

Salad: Chop all the veggies, combine in a mixing bowl with some balsamic vinegar and the dried cranberries- And ‘Wala!’ it’s as easy as pie.

Marinade: Chop the onion and add it to a Container that has a lid.

Pour in the balsamic vinegar and soy sauce into the Container.

Chop up the onion finely.

Add in the spices and salt and pepper.

Mix together until combined.

After The Tofu has been pressed, add it into the container with the marinade and allow it to marinate for 15-30mins.

Cooking: Pre-heat the oven to 185’C.

Line a Baking tray with parchment paper.

After the Tofu has marinated, remove it and place the slice on the baking tray.

Place in the oven and allow to bake for 20-30 mins* keep and eye on it to prevent it from burning.

when the Tofu has 5 mins left, place your slice of bread into the toaster and toast for 5 mins.

Remove The Tofu from the oven when done, slice into smaller pieces and place on the toasted bread and finally Dig in! yummy in your tummy 😛 😀

*-depending on your oven.
